My Take on Kermit’s Pie
For all the best reasons, I could never get Kermit’s recipe, so I reverse-engineered my own. With a few winks from Nellie and Joe, I fabricate a simple version that I truly believe rivals Kermit’s. So, give this a try.
- 1-9" Graham Cracker Pie Crust
- 1- 14 ounce can of Sweetened Condensed Milk - Best Quality available
- 3, Egg Yokes, large farm raised - high end
- ½ Cup Nelie & Joe's Key Lime Juice. (No Substitutes)
- Lime zest
- Combine milk, egg yolks, and lime juice together with zest and hand whisk until it is very smooth and thick. SLOW! Pour into pie crust.
- Bake at 350 degrees F for 10 minutes. Cool and refrigerate for 24 hours. Warning: Don't be tempted to try earlier!
